The Perfect Sugar Cookie

This morning my 5-year-old son asked me if my piano man cookie was still around. Yesterday, I mentioned that I ate it because the cookie was irresistible. As you may know, I am obsessed with the Korean drama on Netflix, Crash Landing on You so after binge watching 17 episodes within 2-3 weeks, I paid my tribute to the main characters by decorating their rendezvous on a sugar cookie - a soft and moist gluten free sugar cookie which was amazing even after 3 days! Wow, I didn’t know it was possible but it happened when I realized I only had 2 cups of Bob’s Red Mill Gluten Free AP Flour. I will mention that I’ve had all sorts of sugar cookies and even invested up to $3 a cookie for a baby shower and bridal shower! You can imagine the beautiful creations cookie artists can do with the different themes and techniques of using royal icing to create cute 3D-like designs to wow your guests and the honoree! Big ups to all cookie decorators out there because it takes patience and a lot of time to design the dream cookies for clients! I am just a wannabe cookie artist and did my research on Youtube - going through a few hours of royal icing and cookie molding tutorials. I’ve also made sugar cookies from scratch using regular flour for my children’s birthday party in the past, and they didn’t turn out perfect. I’ve had sugar cookies from fancy bakeries where it was too dry, too thick, or too much of almond flavor. Needless to say, this gluten free sugar cook recipe shocked me!
