Baked Chicken Parmesan

This is a super easy dinner meal that will keep your picky eaters quiet at the table because they will be too busy stuffing their faces. Feel free to substitute any ingredients to your liking. I didn’t have enough Parmesan cheese so I added shredded cheese. Boy, did I hit the jackpot when I discovered an unopened container of breadcrumbs! You can make a gluten free version of this by simply putting your day old gluten-free bread through a dedicated food processor (this means that the equipment hasn’t been used with any wheat products and that’s very important for people living with Celiac Disease). No food processor, no problemo! Put your choice of day old bread slices in a zipper storage bag and use a rolling pin or papaya pestle to crush the heck out of it - less mess to clean! I also had chicken breasts that I thawed in the fridge from the night before, and I had a few jars of pasta sauce which screamed out to me “Chicken Pasta! Chicken Parmesan! Chicken Parmigiano! Very Cavallari! (I totally bawled my eyes out after Kristin and her friends returned from Italy and Justin finally popped the question) Alright, back to cooking.
